Espelette Chile Kombucha Vinegar

What is Kombucha Vinegar? Basically it’s a Tea + Sugar Cane Vinegar made using the Kombucha process. This is a slower process than other commercial vinegar making processes and results in a milder flavor and a slightly lower acidity. The finished vinegar contains Gluconic + Glucoronic Acids (unique to Kombucha), Acetic + Lactic Acids, Tea Polyphenols, Antioxidants and a whole host of Vitamins + Minerals including considerable amounts of B12, C + Theanine.

We use the highest quality organic green + black teas in our base recipe and source our chiles from Boonville Barn Collective in the Anderson Valley of California.


Use this vinegar for a subtly spicy Mignonette. Add a dash to spiced and caramelized nuts. Use in a cocktail with Mezcal.
